Unico is a so called monocultivar filtered olive oil that has been produced solely from caninese variety olives, harvested early when they are still green. The taste of the oil is strong and robust, fruity and softly bitter, which tells about high polyphenol and antioxidant levels. When fresh, the color of the oil is Emerald green. Caninese olive oils are the flagship of extra virgin olive oils especially in Lazio, and the shelf life of oils produced from caninese olives is excellent. This is a superior category extra virgin olive oil obtained directly from olives and solely by mechanical means.
Due to its strong taste, the oil is perfect as such as a dressing for meat and game, and also for seasoning fish, chicken, vegetables and salads. Naturally the oil is perfect also for cooking.
Nutraceutical product - Reg. CE 432/12 (EU): This extra virgin olive oil contains more than 5 mg of hydroxytyrosol and its derivatives for 20 g of olive oil. The polyphenols of this extra virgin olive oil contribute to the protection of blood lipids from oxidative stress. The beneficial effect is obtained with the daily intake of 20 g of olive oil.
Store the olive oil protected from light and heat, and close an opened bottle firmly after each use. Oxygen, light and heat are the worst enemies of olive oil. Olive oil can be stored in an unopened bottle easily for 2 years provided that it is stored properly (steady cooler temperature and protected from light), but an opened bottle is prone to oxidation. It is therefore recommended to use the olive oil within one month from the opening of the bottle.
